We are so happy to announce that Chef Lil’ Rob Killam has been brought on as an owner of Bread and Circuses!
Chef Rob started working in restaurants at the age of 14 in the Port Townsend area. His real-world schooling gave him a range of experiences ranging from comfort food to fine dining. Just after the opening of Skillet’s first brick & mortar on Capitol Hill, Rob moved to Seattle and joined their kitchen team. Proving himself as a workhorse who never compromises on quality, he was given the Ballard Skillet location to run as sous chef. In 2014 Rob was offered the Executive Chef position for our fun new street food endeavor. Bread and Circuses is a gastro pub of sorts, all about great food without the pretense. You will regularly find quirky recreations of his childhood comforts, with an elevated quality. After 5 years of grinding in the kitchen, coming up with amazing creations like the War of the Pig and the Brussel Sprout Caesar, he was brought on to the ownership team. In season, Rob will spend his days off hiking around the forests of Washington foraging mushrooms. He loves collecting new characters, hearing their wild stories, and joining them on whatever adventures they invite him along on. He regularly hosts generous dinners for his friends. I feel so lucky every time I get an invite, when he cooks for you, he lays his heart on the plate.
